Thailand is a stunning place. But this was one of the most difficult locations for me. This challenge was completely foreign to me because, as I admitted on the show, I never cook with Asian ingredients. I really had to step out of my culinary comfort zone. I felt like I was starting a race from far behind because the other chefs had much more experience with the cuisine than I did.
Despite the challenges, it was incredible being in another culture where people truly appreciate the whole animal. They see the animal’s life as providing others with life. All in all, it helped me to understand that these people see food very differently than we do in contemporary Western culture.
