Taramosalata

Ingredients

Equivalent of 3 slices white bread (crust removed)
3 ½ – 4 oz red lumpfish roe
2 cloves garlic crushed
Juice of one lemon
1 cup regular olive oil (not extra virgin – flavor too strong)

Directions

Soak the bread in water and squeeze out excess. Put the bread, roe, garlic and lemon juice in a food processor and blend until smooth. Slowly add the olive oil while blending further. Continue until thick and creamy. Add salt to taste. (Some roe is less salty than others – it may not even need salt.) Refrigerate. Serve with triangles of pita bread.
