Sort-Of Mexican Casserole
About 2 cups Corn Tortilla Chips (crushed – enough to cover bottom of 9 x 13 pan)
1 lb extra lean ground beef
1/2 onion diced
1 cup corn (fresh or frozen)
1 cup of salsa
1 pkg of Taco seasoning
1 can low fat refried beans
1-2 cups low fat sour cream or low fat plain yogurt (enough to spread in pan)
1 diced tomatoes or 1 can of drained diced tomatoes
2 diced green onions
2 cups low fat shredded cheese – your choosing
Heat oven to 350.
Brown ground beef and onion until cooked through. Drain off any grease and put back on stove. Add corn, salsa, and taco seasoning and cook for 5 more minutes on medium. Move off the heat and set aside.
Take a 9 x 13 casserole dish. Spray the bottom with cooking spray. Spread crushed Doritos on the bottom of pan just so it barely covers the bottom. Spread the meat mixture over top as best you can. Chips will skate around a lot. Heat refried beans up in the microwave, about 60 – 90 seconds until very pliable. Spread over top the meat mixture. Now spread the sour cream on. Place the tomatoes and green onion on top of the sour cream. Cover entire top with cheese and put in the oven for 20-30 minutes, checking at 20. When cheese is bubbly but not too browned, it’s done. Take out and let set for about 15 minutes then serve.
Notes: Please understand that this is not “Mexican” but America’s version of Mexican. In any case, it’s good and filling. I adapted this from another recipe in which it took too long and had ingredients which weren’t to my liking. Plus this is pretty cheap to make, easy to double, and filling to eat. Eat it over shredded lettuce for a taco salad kind of feel.
