3 lemons zest only (use a microplane)
1 14oz bag of sweetened flake coconut
Preheat oven to 375 degrees.
In a bowl, beat eggs until light in color. Add lemon zest and mix well.
Add bag of coconut and mix thoroughly.
Drop by teaspoonful onto non-stick foil or silpat.
Bake for 18 to 23 minutes.
Makes about 30 cookies.
