Chicken and Sweetcorn Soup

Makes 1 large pot
75g chicken, cooked and diced
2 tbsp soy sauce
2 tbsp corn flour
90ml/3floz cold water
2 tbsp vegetable oil
1 inch fresh ginger, peeled and finely chopped
4 cups chicken stock
1 bag frozen sweetcorn
Salt and pepper to taste
Place the chicken in a bowl and add the soy sauce, cornflour, water and seasonings and set aside
Heat the vegetable oil in a large saucepan and add the ginger and chicken stock. Bring to simmering point.
Add the chicken mixture and mix together. Add the sweetcorn. Add the beaten egg.
Simmer gently until the sweetcorn is cooked through.
Notes: You can play around with the portions of egg, sweetcorn and chicken. If you want more or less of one these ingredients, it will not affect the flavor.
